<p>1 lb. pork steak, cut up (with bone if possible, sausage may be substituted)</p>
<p>1 large onion, chopped</p>
<p>2-3 ribs celery, chopped</p>
<p>1 bell pepper, chopped</p>
<p>2 cloves garlic, chopped</p>
<p>2 cups chicken broth,</p>
<p>1 cup Cajun Country Medium Grain Rice, raw</p>
<p>&nbsp;</p>
<p>Directions:</p>
<p>Season meat with Cajun or other seasoning blend and marinade in Italian salad dressing.  Brown pork well and remove from pan.  Drain off excess oil leaving enough to sauté onions, celery, bell pepper and garlic until tender.  Return meat to pan and add chicken broth. Cover and cook until meat is tender, stirring occasionally. Add Cajun Country Medium Grain Rice and cook covered over a moderate to low heat, stirring often.  Add more liquid if needed to cook rice.  Season to taste. Garnish with fresh chopped parsley. Serves 6.</p>

<p>8 cups water</p>
<p>1 cup powdered roux</p>
<p>1 cup chopped onions</p>

<p>1 tbsp. Worcestershire sauce</p>
<p>4 tsp. salt</p>
<p>2 tsp. red pepper</p>
<p>1 chicken (4-6) cut into pieces</p>
<p>1 lb. smoked sausage, sliced bite size</p>
<p>2 tbsp. green onions and parsley, chopped</p>

<p>Directions: In 6-quart saucepan or stockpot, combine water, powdered roux, chopped onion, bell pepper, celery and garlic. Bring to a boil and add salt, pepper and Worcestershire sauce. Cook at least 20 minutes. Add chicken and sausage and cook 30 minutes more or until chicken is tender. Before serving, add onion tops and parsley. Serve in a bowl over any variety of steaming Cajun Country Rice. Serves 8.</p>

<p>Instructions:</p>
<ul>
