Ingredients:
1 stick margarine
2 large ripe bananas, well mashed
2 tbsp. hot water
1 tsp. lemon juice
2 cups all-purpose flour
1 cup sugar
1 tbsp. baking soda
2 eggs, slightly beaten
1/2 cup chopped nuts
Directions:
Cream sugar and margarine until light and fluffy in a medium-sized mixing bowl. Add bananas. Place baking soda in hot water until dissolved and add to mixture. Add eggs, lemon juice, nuts, and flour to creamed mixture. Stir just enough to combine ingredients. Pour batter into wax-paper-lined loaf pan. Bake to 350 for 1 hour. Remove bread from pan and peel off paper. Serve warm or cold.
